Cinnamon blossoms are the immature harvested fruits / flowers of the cinnamon tree. Less aromatic than the better-known cinnamon bark, the cinnamon blossoms, which are reminiscent of cloves, are used for their fragrance. In order for this mild-sweet smell to develop, they should only be ground shortly before use or ground in a mortar. Whole cinnamon blossoms are decorative in applied liqueurs and alcoholic drinks. Ingo Holland spits a lobster tail half with the spice.
