Cinnamon is used in our kitchen almost only for sweets, for example, it is often flavored with cinnamon and cloves. But cinnamon is more versatile. In India, cinnamon is also used in spicy cooking, mostly uncooked: the bark pieces are fried in hot oil until they unroll (which is important to release the taste), then the temperature is quickly reduced by mixing with others Ingredients such as tomatoes, onions or yoghurt quenches. Even rice can be wonderfully flavored with cinnamon, together with green cardamom. The cinnamon pieces can be removed from the dishes before serving or serve as a fragrant decoration. The particularly aromatic cinnamon comes from Sri Lanka / Ceylon.
