This salt specialty is more aromatic spice than salt. In Hindi, Kala Namak means black salt, which initially distinguishes the rock salt from the white halite. However, Kala Namak is more brownish-red to pink. In addition to the coloring iron, it contains magnesium and a low concentration of hydrogen sulphide, which makes the typical sulfurous odor. In Indian cuisine Kala Namak is not used for actual salting, but for mineralizing and above all for flavoring. The spiciness and aroma of this salt go well with exotic fruits, chutneys, vegetables and fish. Kala Namak is the traditional topping on raitas, with yoghurt, cucumbers and tomatoes.
