Fish sauce is an essential ingredient in Southeast Asian cuisine. Small, protein-rich fish are left to ferment with salt for several months. The resulting liquid is then removed and the fish mature again in wooden barrels for several months. The sauce obtained in this way is used extensively in Thai and Vietnamese cuisine. A dip: 1-2 red or green chili peppers, 1-2 tablespoons sugar, 2 tablespoons lime juice, 4 tablespoons fish sauce.
