Top-class seafood preserves come from the Los Peperetes factory in Galicia. The owners Jesus Lorenzo and his Dona Paz originally started preserving the small delicacies in their popular restaurant Los Peperetes. The barnacle (pollicipes pollicipes) is not a mussel but a crustacean from the barnacle class. Only the stalk of the barnacle is edible and is considered a delicacy in Spain and Portugal. The dark skin should also be removed. There you are known as Percebes. Barnacles are generally steamed in their bowls on vegetables or in a wine sauce and served hot. The taste is similar to crab meat.
