This caviar is made from the roe of female trout. Like Keta caviar, it is considered a substitute for sturgeon caviar. It tastes best when it is only lightly salted. The red caviar pearls are ideal for enhancing herbal cream soup, for example, or as an edible decoration for cold plates. Trout caviar is firm, crunchy and tastes pleasantly strong.
