Blonde chocolate - a completely new creation from Valrhona. The blonde-colored Dulcey has a creamy, flattering texture. Their biscuit-like, mild sweetness leaves distinctive notes of shortcrust pastry with a hint of salt. With its intense flavors, Dulcey goes particularly well with caramel, coffee and hazelnuts as well as with less sour yellow fruits such as mango, banana and apricot. The basic idea for this new chocolate family came about by a happy coincidence. Frederic Bau, from the Ecole du Grand Chocolat Valrhona, simply forgot white Ivoire chocolate in the bain-marie. After years of further development, Dulcey, a unique product with very unusual features, can now find its way into the world of patisserie.
