Cocoa beans are fermented, that`s not new. But fermenting twice is a must. You need sugar for that. The beans are first mixed with ripe bananas, fermented a second time and then freed from the resulting banana puree. Voila, only Valhrona can do that! Therefore, the Kidavoa is a milk chocolate with a rich, complex profile of dried banana and a malty undertone. All other ingredients should fit into this taste spectrum. Like, banana - of course, caramel, vanilla, pistachio, coconut blossom sugar, pecan, almonds or hazelnuts.
