This caviar is made from the roe of female trout. Like Keta caviar, it is considered a substitute for sturgeon caviar. It tastes best when it is only lightly salted. The gold-orange-red caviar pearls are ideal for enhancing herbal cream soup, for example, or as an edible decoration for cold plates. Trout caviar is firm, crunchy and tastes pleasantly strong.
