The medlar is a plum-sized, sweet and sour tree fruit that is mainly grown in the Mediterranean countries, Turkey, Brazil and Germany. Because of their high pectin content, medlars are often used for making jams, jellies and purees. In the past, they were added to wine or must to improve them because of their high tannic acid content. Ripe medlars are rock hard, so they need to be exposed to frost to be eaten raw, then they become crumbly and gain their aromatic taste. Thomas Rink`s medlars are sugared and are ideal for garnishing fruit tarts, cold bowls, desserts, in fruit salads, with muesli for breakfast and as a side dish in main courses.
