Like apples and pears, the quince belongs to the pome fruit. Depending on the appearance, a distinction is also made between apple quince and pear quince. But this is the only thing in common, the taste of the quince clearly stands out from apples or pears. The fruit is furry and hairy on the outside and has essential oils on the surface, which spread a very special scent. The intense aroma can also be found in the brandies. Intense exotic aromas beguile the nose and continue on the palate in a very compact and straightforward manner. Because of the low yield, quince is also often produced as a spirit, which - according to the philosophy of the house - is out of the question for us: At Gölles, foreign alcohol is never added to the distillate.
