This paste is a condiment made from crushed lemongrass. Lemongrass owes its name to the lemon-like scent of the essential oils it contains. It gives Thai and Indonesian meat, fish and vegetable dishes a fine lemon note. The fine aroma of the lemongrass gel is fully retained in the vegetable oil. Thus, this lemongrass is far superior to the dried powder and much more productive. It is best not to cook the lemongrass paste, but use it to taste the dish shortly before serving.
