Wasabi is a green root plant with a pronounced pungent taste. Originally native to Japan, it only thrives in flowing waters. The root, which is comparable to horseradish, is now also cultivated in New Zealand and the USA. Wasabi is traditionally used as a condiment for sushi and roasted nuts and pulses. The typical wasabi sharpness is created by the volatile mustard oils it contains and burns in the throat and nose. Wasabi is offered as a fresh root, powder, or paste. The powder should be mixed with a little liquid and then refined with spices to taste.
