The peel and the squeezed juice are used from these lemons pickled in brine. The taste is unique and when used correctly, the lemons are a wonderful spice that is preferred for North African dishes such as Moroccan tajines. The peel, which has largely lost its bitter substances due to the pickling process, can be cut into small pieces to flavor soups, sauces or vegetables.
