Gum Arabic is obtained from the sap of African acacia species. The natural excipient is mainly used for thickening and stabilizing. In confectionery it prevents sugar crystallization, in ice cream it can control the undesirable formation of large crystals and in fat-water mixtures it stabilizes the emulsion. Gum Arabic makes small baked goods, such as cookies, durable and shiny.

Observe maximum quantities and use in food according to Regulation (EC) No. 1333 / 2008 on food additives! For professional use only!
