From the heart of Mallorca: the premium sausage from Xesc Reina! Xesc Reina is one of the most renowned sausage makers in Spain. In cooperation with the Gebrüder Company, he produces the finest sobrasadas and fuets from the Porc Negre (Mallorcan pig breed). These pigs live and grow freely on two idyllic fincas in the center of the island (near Sant Joan and Maria de la Salut), feed on carob, figs, olives and only the grain produced on the property. The Porc Negre grow up there separately according to age group, between forest, fruit trees and mud, lead their lives wildly and have no stress. The Porc Negre are slaughtered when they are around 12-14 months old. From their muscle meat, Xesc Reina makes a Fuet sausage. Only certain lean parts of a pig are processed. After drying, 30 kilos of meat turn into around 15 kilos of sausage, i.e. around 100 fuets. It is matured for about 1.5 - 2 months.
