In our kitchen, cinnamon is almost exclusively used for desserts, e.g. compotes are often flavored with cinnamon and cloves. But cinnamon can be used in a variety of ways. In India, cinnamon is also used in savory cuisine, mostly unground: the pieces of bark are fried in hot oil until they unroll (this is important to release the taste), then the temperature is quickly lowered by mixing with others Deglaze ingredients like tomatoes, onions or yoghurt. Rice can also be wonderfully flavored with cinnamon, together with green cardamom. The cinnamon pieces can be removed from the dishes before serving or serve as a fragrant decoration. The particularly aromatic cinnamon comes from Sri Lanka / Ceylon.
