The selected whole summer truffles (tuber aestivum / unicinatum) are boiled in water with a little sea salt. The best truffle was processed here, fresh on the day. They can be used like fresh truffles and the jus for flavoring and refining. Cut or sliced into small pieces, they are ideal for making terrines, pies, sauces or cream cheese. For sauces, they should be sautéed in a little olive oil beforehand without jus. Then you can use the juice to taste.
