DE-ÖKO-001 Quinoa - the miracle grain of the Incas - belongs to the goosefoot family. Like amaranth, quinoa is a pseudocereal, which means that it forms starchy seeds, but is not a grain. The grains, which are reminiscent of millet, are coated with a resin that is removed by washing before processing. Quinoa is cooked like grits; they are added to soups and used for cakes and croquettes. Gluten free.
