Beurre Noisette is made by carefully melting fresh butter. The butter fat is separated from the milk protein and the milk sugar components are allowed to caramelize slightly while heating. This gives the clear, golden yellow butter its eponymous nutty taste. Beurre Noisette can be served as a sauce especially with fish. A trout Müllerin Art can be fried in this butter. It is ideal for assembling sauces or for frying poultry in it. Truffle dishes get a particularly full flavor with the nut butter.
