Wild Rosella is the Australian wild hibiscus whose bright red flower-shaped fruits (fleshy calyxes) are used in a variety of ways in bush food cuisine. The more than 50 known species are found in dry land, the rain forest or in the Sydney region. Its tart raspberry and rhubarb flavor is appreciated in sauces, relishes, cake fillings, pies, ice creams, syrups and sorbets.
