This bold mountain cheese is made by Dorfsennerei Sibratsgfäll, a cooperative dairy in the Bregenzerwald in the Austrian state of Vorarlberg. The mountain cheese has rich notes of meat and nuts that contrast with its slight sweetness. The persistent aromas are due to the quality of the hay, the resulting good milk and the minimum 16-month aging and washing. As a mountain cheese, it can traditionally be served with radishes, grapes or salad. A must for Käsespätzle but it`s also great for other pasta or as a gratin cheese. Perfect with beer, but also with full-bodied white wine or soft red wine with low tannins.
