DE-OKO-001 Puffed buckwheat is a popular ingredient in muesli and granola. Combined with melted chocolate and then hardened, it can be used to create wonderful pastry bases and sweet snacks. Buckwheat is naturally gluten-free, which makes it popular with allergy sufferers. In contrast to puffed rice, buckwheat tastes nuttier. Buckwheat is mainly prepared as soup or groats in Russia and Poland. It is similar to beechnuts, but is much smaller. The high protein and starch content makes buckwheat, which is not actually a grain but a knotweed plant, a valuable pseudo-grain. In combination with wheat or rye, it is used to make bread, pastries, porridge and groats.
