DE-ÖKO-003 Barley is one of the first crops cultivated by man. However, it has been somewhat forgotten as a foodstuff and is now known almost exclusively as animal feed or as a raw material for beer brewers. Only the ground barley grains - the pearl barley - are sometimes still part of hearty dishes. It can be used whole or crushed for soups, casseroles or risotto. Due to its low gluten content, it has to be combined with wheat for baking. Whole barley grains can be used to grow mildly sweet seedlings that go well with muesli or salads.
