DE-ÖKO-001 As a local alternative to soy, the protein-rich lupine has a lot to offer. The seeds are also starch and gluten free. Lupine flour can be processed into bread, biscuits and pasta. It binds a relatively large amount of water and makes the dough more elastic. The fat content of 4-7 percent is sufficient to bind dough and allows baking without eggs. Antioxidant ingredients increase the shelf life of the baked goods. Lupine flour also gives baked goods a nutty taste and a slight yellow colour.
