As crabs and other shellfish grow, after a while they need to molt. Shortly after this moult they are usually very tender. After about 3 days they are usually hardened again. Before this point in time, however, they are of culinary value above all, because they can be fried with the skin, for example, and eaten whole. However, it should first be freed from anything disturbing (eyes, gills, etc.).
