Agazoon® contains agar-agar (E 406), which is obtained from the cell walls of some types of algae or seaweed. It is a polysaccharide (= multiple sugar) and is available as a white-yellowish or gray powder. Agazoon® can be used as a thickener, gelling agent or stabilizer. It can be easily incorporated into cold or warm liquids and gels after boiling. Jellied foods are very stable and can be reheated (up to 80°C) or served warm. In the food industry, agar-agar is used to make soft caramels, marshmallows, meringues, icing, fudge, fillings, jams, processed cheese, yogurt, ice cream, jellies, and canned meats. It can be used at home as a vegetarian substitute for gelatine.
