Lemongrass thrives in tropical climates. The soft part above the bulb of the reed-like sweet grass is used fresh or dried. Due to the high content of citral, an essential oil, it has a gentle lemon-like aroma. Lemongrass is a very popular spice, especially in Southeast Asian cuisine. It goes well with ginger, coconut, garlic, shallots and allspice. Fresh lemongrass is pounded flat with the back of a knife and removed from the food after cooking. This is necessary because the lemongrass stalks are very fibrous and cannot be eaten.
