Brewed from black soybeans, a variety that is less productive. Both the beans and the wheat come directly from Shimane Prefecture, Morita`s home province. Colour, scent and taste are very elegant and, like a good olive oil, nestle around the ingredients and emphasize their own taste. Very strong umami (amino acid). Brewing/maturation time: 2 years in wooden barrels Use: All-round sauce for all dishes. The unobtrusive delicacy is also ideal, for example, to round off a German Flädlesuppe without making it taste like soy sauce. Morita is a shoyu brewer from Shimane Province in southwestern Japan`s main island of Honshu. Founded in 1903, Morita still brews only with regional or Japanese basic ingredients and attaches great importance to quality and naturalness. For ponzu and dashi products, only the basic products such as katsuobushi and konbu are used and no extracts or similar. For Mr. Morita, that goes without saying!
