This shoyu represents the tradition of light soy sauces from the Kansai region around Kyoto and Osaka. Light shoyu is used especially for the elaborate Kaeseki cuisine, in which the colors of the ingredients should be preserved. Ideal for dashi stocks, dressings, but also fantastic with rice vinegar and freshly ground pepper on gyoza and dumplings! Both for raw consumption and for heating. Suehiro`s premium product.
