In traditional restaurants, murasaki is used instead of shoyu. Murasaki means purple or violet. Not only is this a poetic paraphrase, but it also sounds more polite as it is an indirect expression. Dark Purple is a Sandanshikomi Shoyu with a slightly syrupy texture. Sandanshikomi stands for the 3-phase fermentation, which is also used in miso or sake. This longer fermentation not only gives the shoyu a darker color, but also a special depth of taste. Very good for sashimi and sushi.
