The soya lecithin is used to froth liquids, e.g. with a hand blender (flat attachment) or a whisk. With this texturizer, the foams remain more stable and are also freeze-proof. The powder is stirred in cold. The emulsification ability decreases depending on the proportion of fat and oil in the medium to be frothed.

Emulsifier soy lecithin. SOY LECITHIN E322. Phospholipid obtained from soy with high foaming and emulsifying power. Creates airy structures and light foams, including oil foams. Can be frozen. Instructions for use: Mix cold while stirring vigorously and introduce air into the mixture. An even better effect is achieved by heating the mixture to around 40°C. Dosage: 3 - 8g/kg. Keep cool, dry, protected from light, tightly closed and out of the reach of children.
