Kuzu is the abbreviation of kuzu starch, a carbohydrate obtained from the root of the Asian plant of the same name. It is also known as `kudzu`. Particularly useful for broths, sauces, creams and purees, it offers a wide range of textures. Its ease of use allows you to calculate with great accuracy the viscosity to be achieved in the final preparation. Also suitable for batters and crunchy textures. Mix hot or cold, stirring vigorously and heat just until boiling.
