Antonio - Aged Balsamic Vinegar of Modena has a strong but balanced taste, aged in Carandini wooden barrels for at least 3 years until reaching the right density (1.34). Antonio offers an intense flavor profile and a lingering aroma. - Aged in wooden barrels for at least 3 years. - 80% cooked grape must - Density: 1.34 - Very rich and sweet - Persistent with woody aroma - High viscosity Very dense and sweet, ideal to give that final touch to dishes: risotto and fresh pasta, aged cheeses, red meats - Tagliata, Filetto, etc... - as well as for desserts such as panna cotta, mascarpone and ricotta cheese, fruit salads, vanilla ice cream and also with dark chocolate. Antonio Carandini is the oldest ancestor found in historical archives. In a document from 1641 he is mentioned for the great craftsmanship in the production of balsamic vinegar from Modena.
