Multifaceted, soft and complex. Scent of wild berries, juicy in the body, strong and full, with an elegant and lasting taste. 23 months aging on the lees. The history of Vaux began with the founding of Vaux Castle in Berlin in 1868. In the eighties that followed, the company acquired the Chateaux de Vaux, not far from Metz on the Moselle, along with extensive vineyards, and so a German sparkling wine house was born. For fifty years, the Chateaux de Vaux housed the production base. Then the owners had to give up the domicile, which had meanwhile become French. The rose town of Eltville on the Rhine became the new seat of the manufactory. All Schloss Vaux sparkling wines are made using traditional bottle fermentation.
