In traditional restaurants, the term murasaki is used instead of shoyu. Murasaki means purple or violet. This is not only a poetic euphemism, but it also sounds more polite because it is an indirect expression. The smoky one is an extra-long-matured shoyu that is smoked for 8 hours with chips from regional cherry trees. Very good with mozzarella and tomatoes and popular in vegan cuisine. Mixed with a good sesame oil, it is a real umami bomb! Tip: Fry or grill meat and vegetables unseasoned and eat with the 3 different purple shoyu and compare.
