Brioche on the nose, ripe yellow fruit, some acacia and hints of nuts. Refreshingly juicy on the palate with lively perlage and good structure The Pinot Noir grapes from the super vintage 2018 were carefully selected by hand, destemmed and pressed whole. The controlled fermentation and further development took place in stainless steel tanks and large oak barrels. After 9 months of first fermentation on the yeast, bottling followed for the traditional second fermentation. After 25 months of aging in the bottle, the yeast was separated, known as `disgorging`, in June 2021.
