This sweet, savory and tinglingly hot ginger is called sushi gari and is pickled in water, salt, sugar and vinegar. It is primarily used as a side dish for sushi or sashimi, but can also accompany other dishes depending on your preference. It is one of the basic ingredients in Asian cuisine. There it is also used to season meat, sauces, fish, seafood, rice, tofu and soups.
