Sauce Hollandaise It is also called the `queen of sauces`. It is one of the classic basic sauces in traditional cuisine. Egg yolk is whipped in a water bath until foamy and enriched with butterfat. This creates an emulsion (a very fine distribution of water and oil) with the finest taste. Sossenkönig uses a different process, which makes our hollandaise stable and versatile. By using fresh A2 butter with natural whey, we have created a very special taste. Refined with white wine, fresh herbs or diluted with hot asparagus stock, it is the perfect accompaniment to asparagus, vegetables, fish or meat.
