As a variation of our traditional hollandaise sauce, Sossenkönig has conjured up a truffle hollandaise. Fresh summer truffles and truffle oil give the sauce its inimitable taste of luxury tubers. She is also called the `Queen of Sauces`. It is one of the classic basic sauces in traditional cuisine. Egg yolk is whipped in a water bath until foamy and enriched with butterfat.
