Ideal if for the occasional tea enjoyment in premium quality. The Japanese calendar counts 88 days from the beginning of spring to the harvest of Hachijuhachiya tea (88 nights). This Sencha from the first picking consists of the particularly tender leaves of the tea tree. If you pour hot water (approx. 80° C) on it, it develops a delicious balance between floral sweetness and light, refreshing tartness. Beautiful umami. At approx. 80° C for 60 to 90 seconds. A second infusion with hotter water is possible. Tip: Use these tea leaves after the infusion, eg as a tempura or for fried rice. Chiyono Tea Farm is located 600 meters above sea level in the famous Yamecha location of Fukuoka Prefecture in southern Japan, surrounded by mountain forests. The small family business is managed in the 3rd generation, harvested by hand and no pesticides or artificial fertilizers are used. Last but not least, because the climatic conditions allow sufficient snowfall, this can be avoided.
