Aigamo means duck in German, so maybe this noble trope should be called duck sake? This is because the rice (the region`s local hitogokochi variety) for this genshu is grown using a special method that allows ducks into the paddy fields to eat pests such as snails while also fertilizing the rice. This is a relatively complex process that forms a natural cycle and makes it possible to dispense with the use of chemicals. Its rich umami and higher acidity make this sake a very suitable accompaniment to heartier dishes such as meat or stews. Even if this sake tastes very strong and full (yogurt and rice notes), it is not overpowering and fully represents the style of the Suien brewery. Suien - `Drunken Garden` is a traditional brewery with over 200 years of tradition from Nagano Prefecture. The small town of Azumino is famous for some of the best wasabi in Japan. Wasabi only grows in very clear, fresh water and this is exactly what Suien uses to brew its sake.
