Kroepoek is made from a mixture of tapioca flour and spices and is sold in dried slices. This variant is seasoned with ground shrimp. When baked in hot oil, the slices more than double in size in seconds. They are eaten with the rice table, but also with wine, beer or spirits.
Shrimp chips, unfried (Kroepock). Tapioca starch (contains SULFITE), 10% shrimp, sugar, salt, garlic, acidity regulator: citric acid and sodium carbonates, flavor enhancer: monosodium glutamate. Preparation: Heat enough oil in a pan or deep fryer to approx. 170-190°C. Allow the crab bread to swell in small quantities one at a time and bake until a light brown color is achieved. Then quickly remove it from the oil and let it drain. Note: There needs to be enough oil in the pan to completely cover the crab bread. The frying temperature should not be higher than 180°C, otherwise the crab bread will not rise evenly and will burn more easily. Store dry.
