Thalassery, formerly Tellicherry, is located in the northwest of the Indian state of Kerala and is the namesake of one of the very special and best types of pepper that India has to offer. Tellicherry pepper is made from fully ripe red pepper berries that are fermented with the whole pulp and dried. The pepper turns black as a result, but not jet black, but rather has a pleasantly deep brown hue. Through this process, the aroma has developed much more clearly: The fully ripe peppercorns have taken on a distinctly nutty taste, but also a strong spiciness. This pepper is primarily used for dark meat such as game and beef, but also for chocolate desserts.
