Zatar is a spice preparation popular in the eastern Mediterranean and north-east Africa. The main ingredients are thyme, sumac, sesame and salt. Zatar can easily be eaten with bread dipped in olive oil and yoghurt. Salad dressings or yoghurt sauces can be flavored with zatar. The spice preparation also refines roasted and grilled lamb, poultry or fish dishes.
