Palm hearts are the delicate interior of the so-called vegetation cone - from which the bases of the palm fronds of various palm species are formed. Their delicate taste is reminiscent of sour artichokes and goes well with salads and seafood dishes. They also taste delicious gratinated or with a bechamel sauce with cooked ham. The easiest way to serve them is to cut them into thick slices with vinegar and oil.
