The British Double Cream is a particularly rich, solid cream with 48% fat. It is roughly a counterpart to the French cream double (which usually has an even higher fat content). Due to its firm texture, it is particularly helpful in sweet dishes, in ice cream production or in baking in the broadest sense. It can also be used excellently to refine soups and sauces, as the high fat content offers a rich taste and ensures a creamy texture.
