The knuckle, also called knuckle of pork, is cut out of the leg between the elbow or knee and the ankle. While in Germany the entire piece is removed, in the Netherlands the pork knuckle is cut in a semicircle from the meaty hind legs. After defrosting, place the knuckle in the bag in warm water for 5 minutes, remove from the bag, drain off the liquid and then dab it off. Lightly salt the rind. Bake in a preheated oven at 250°C hot air for approx. 25-30 minutes on a rack. The rind is aligned in the direction of the blower. Place a bowl of water under the knuckle to catch the dripping fat and to avoid smoking. Also works on the grill!
