This white, semi-hard cheese with its distinctive mint flavor has been made in Lebanon and Cyprus (Halloumi) for centuries using ancient recipes. This halloumi is made from a mixture of sheep`s, goat`s and cow`s milk. Characteristic are the shots of fresh mint leaves and the traditional folded shape. Due to its unusual property of not melting when fried or grilled, halloumi can be prepared in many different ways. The cheese is often tossed in flour, deep fried and served with lemon as an appetizer.
