The grapes for the Fume were harvested by hand from the two oldest and topographically most valuable Sauvignon Blanc vineyards. After a further berry selection, only very ripe and quince-yellow berries reached the wine press house. The must was then fermented and stored in large wooden barrels for several months. This traditional approach reveals a fine smoke aroma (Fume) and a real potpourri of exotic fruits.
